Basic  Chilli

1lb ground sirloin
1/4 cup Booker’s Chilli seasoning
1 can (14.5oz) petite cut diced tomatoes
2  (15oz) cans Brooks chilli beans (either hot or mild) or 1cup dried small red beans.
2/3 cup water

Brown sirloin and drain
Add 1/4 cup of Booker’s Chilli Seasoning and stir in
Add diced tomatoes
Simmer for 10 minutes
Add beans and water to desired consistency.
Simmer on low heat to 20-30minutes stirring occasionally.

 Tavern Chilli

15lb ground sirloin (80/20) 
3 lb beef suet
3.0 cups Bookers chilli seasoning
2 large cans Brooks Chilli beans (6lb-15oz) or 10 cups dried small red beans

Render suet
When hot, add ground sirloin and cook for 20 minutes
Slowly add Booker’s chilli seasoning and cook in
If making large batch, add prepared beans and simmer on low heat for at least 30 minutes. Add water for desired consistency and salt to taste.

If making chilli bricks to freeze for later use, do not add beans.
When chilli has cooked, Transfer into shallow cake pans until chilli is approximately 1-1/2” deep.
When cool, refrigerate overnight.When solid, slice into bricks approximately 1 lb each. Wrap individual bricks and freeze.
When serving, unwrap brick and heat; add beans and water to desired consistency. Simmer on low heat for 30 minutes. 

Barb’s Chilli Mac

Brown 1 lb ground beef and 1/2 diced onion
Add 1/4 cup Booker’s chilli seasoning
Stir in 1 can of tomato sauce and add 1 or
2 (15oz) cans of Brooks chilli beans (hot or mild)
Serve over cooked macaroni or spaghetti and sprinkle with Mozzarella cheese
Serve with French bread or corn muffins

                                      Sweet corn 

Sprinkle booker's chilli seasoning over hot buttered sweet corn

 

Uncle Johnny’s Chilli

1 large diced onion
3 cloves minced garlic
6 tbsp margarine
1-1/2 ground sirloin
1 (16 oz) can tomato sauce
2 cans red beans or 1 cup dried beans soaked and cooked for 1 hr.
1/3 cup Booker’s chilli seasoning

Saute onions and garlic in margarine
Add ground sirloin and brown
Add Booker’s chilli seasoning and cook in slowly
Add remaining ingredients and simmer for 30 minutes
Serve with cold beer

Patties Meatless Chilli

3 TBS olive oil
2  (6 oz ) packages Boca ground Burger
1 large yellow onion
2 cloves garlic minced
2 cups vegetables. Bullion
1 (14oz )can petite diced tomatoes
1 (4oz )can crushed tomatoes
1 can kidney beans
1 can red or chilli beans
2 TBS Bookers Tavern Chilli Seasoning
1/4 Tsp red pepper (or to taste)

Saute onion and garlic until just beginning to turn translucent
Add Boca Burger and heat until warm
Add bullion, tomatoes, beans, Booker’s chilli seasoning and red pepper
Simmer 30 minutes and serve.   

                          Chicken Bacon Snacks

Cut boneless chicken breast into 1-1/2 inch cubes.
Roll into a mixture of 1/4 cup Booker’s chilli seasoning and 1/2 cup brown sugar. (adjust brown sugar to suit individual taste)
Wrap with 1/3 slice of bacon and pin with toothpicks
Bake on greased baking pan and bake until chicken is cooked and bacon crispy
Charcoal or other outdoor type grills may be used

             * pork makes a great substituted for chicken              

                             Dry Rub

Sprinkle  Bookers chilli seasoning on ribs, chops,or chicken prior to placing on grill. Prior to removing from grill, coat with your favorite Bar-B-Q sauce.
